At Stone Barns Center, a self-sustaining organic farm, education center, and restaurant located 30 miles from Manhattan, chefs and farmers are re-creating the community-based farm that once nourished us all. All of the employees contribute their expertise, from planning and growing crops to serving up multi-course meals at Blue Hill, the center's restaurant. On spring days, visitors hike tree-shaded trails that traverse 80 rolling acres, crossing paths with boot-strapped farmers and the occasional grazing animal. They browse the center's educational exhibits, and sign up for classes on everything from beekeeping to foraging. And, they savor farm-fresh food.
