For trail-ride cookouts, the broccoli is cooked ahead, then tossed with the butter on site and reheated.
1 1/2 lb. broccoli
1/4 cup butter, melted
1 Tbsp. fresh lime juice
1/2 tsp. ground chipotle pepper
Salt
Place a steamer basket in a large saucepan. Add water to just below the bottom of the basket. Bring water to boiling. Add broccoli. Cover and steam for 8 to 10 minutes or until crisp-tender.
In a serving bowl, stir together melted butter, lime juice, and pepper. Add broccoli; toss to coat. Season to taste with salt. Serve immediately. Makes 6 servings.
