2/3 cup butter, softened
3 Tbsp. snipped fresh Italian (flat-leaf) parsley
3 cloves garlic, minced
1/8 tsp. cayenne pepper
Sea salt and freshly ground pepper
One 16-oz. loaf hearty artisanal Italian bread, cut into 3/4 inch slices
In a bowl stir together butter, parsley, garlic, cayenne, and salt and black pepper to taste. Spread a thin layer of butter mixture on both sides of each bread slice. Place slices on the rack of an uncovered grill directly over medium coals. Grill 2 to 4 minutes or until toasted, turning once halfway through grilling. (Or, thread bread slices onto grill sticks and toast each side over grill or campfire.) Makes 1 loaf (16 to 20 slices). |
