Peaches and cream has always been a favorite making this Ouisie recipe a favorite. Ouisie serves this sweet soup (great for lunch or as a dessert) topped with a fresh fruit cocktail. Just before serving, combine 1/2 cup each of finely chopped seeded watermelon, unpeeled peaches, and banana.
3 ripe medium peaches (unpeeled), coarsely chopped
1/2 cup plain yogurt
2 Tbsp. honey
2 Tbsp. half-and-half, light cream, or milk
1 Tbsp. lime juice
1/4 tsp. grated fresh ginger
1 Tbsp. finely snipped fresh basil
1/2 cup whipping cream
1 Tbsp. honey
1 tsp. dark rum
Fresh peach slices
Fresh mint sprigs
1. In a blender combine the 3 peaches, yogurt, 2 tablespoons honey, half-and-half, lime juice, and ginger. Cover; blend until smooth. Transfer to a storage container; stir in the basil. Cover and refrigerate several hours until well chilled.
2. In a well-chilled mixing bowl beat whipping cream, 1 tablespoon honey, and rum with a whisk or electric mixer until soft peaks form.
3. To serve, ladle about 1/2 cup of the chilled soup into each of 6 shallow serving bowls. Dollop with whipped cream and garnish with fresh peach slices and mint. Serve immediately. Makes 6 servings.
